Salmon has always been my favorite fish to enjoy. Fresh salmon is even better. Quick, simple, easy and tasty is truly what we go for in our household.
This salmon recipe is light, simple and flavorful which is satisfying at the end of a long day. No fancy sauces are included, but the sweet zest this recipe provides is sure to make everyone happy and wondering when you’re cooking this recipe again! Often times it’s just my husband and me, so we share an 8 oz. salmon fillet. If you’re looking to serve more for dinner or any occasion, simply prepare more fillets (rather than just one 8 oz. fillet), the same rules apply!
Serves: 1-2 Prep: 20 Minutes Cook: 25 minutes
Ingredients:
* Salmon fillet (8 oz.)
* Butter
* Garlic Bulb
* Brown Sugar
* Sweet Onion
* Lemon
* Grated Parmesan Cheese
Equipment:
* Tin Foil
* Cookie Sheet
* Paper Towel
* Meat Thermometer
Prep:
* Bring the salmon to room temperature (usually 15-20 minutes)
* Pre-heat oven to 350˚F
* Create a tin foil boat for your salmon to sit in (big enough your fillet doesn’t touch the foil edges)
* Place tin foil boat on cookie sheet
* Pat the salmon dry on all sides with a paper towel
* Slice butter
* Mince fresh garlic
* Slice sweet onion into onion rings
* Slice lemon into slices
Instructions:
1. Place the salmon in the tin foil boat, skin side down
2. Cover the salmon fillet with slices of butter leaving about ½ inch between slices on the fillet (3-4 slices are a good amount for an 8 oz. fillet)
3. Sprinkle fresh minced garlic over the top of the butter on the salmon fillet, add your desired amount (1 tsp. is a good amount for an 8 oz. fillet)
4. Sprinkle grated parmesan over the top of the garlic, add your desired amount (1 tsp. is a good amount)
5. Sprinkle brown sugar over the top of the salmon fillet covering the butter, minced garlic and parmesan cheese, add your desired amount (2 tbsp. is a good amount for an 8 oz. fillet)
6. Place fresh sliced sweet onion rings over the top of the salmon fillet on top of the butter, garlic and brown sugar (6-8 rings are good for an 8 oz. fillet)
7. Squeeze fresh sliced lemon over the top and then top fillet with lemon slices (2-3 lemon slices are good for an 8 oz. fillet)
8. Bake in the oven for 20 minutes
9. Remove from oven
10. Sprinkle fresh grated parmesan over the top of the fillet and return to the oven for 5 minutes
11. Remove from oven (Internal temperature of salmon should be 145˚ at the thickest part of the fillet)
12. Remove from skin
13. Squeeze fresh lemon over the top of the salmon fillet
14. Serve
15. Enjoy!
Salmon pairs well with veggies and rice!
Leftovers? No problem, salmon is good in the fridge if stored correctly for up to 3 days. I love to eat my leftover salmon over a salad for lunch! If you plan to reheat your leftover salmon, do it slowly so it doesn’t dry out.
