As we enter the summer of the year, avid deer hunters nationwide are beginning to dream of the opening morning sunrise view that awaits. Food plots are being planted, trail cameras are being run, and bows are being shot. Overall, it is a marvelous time to be a whitetail fanatic.
Summertime also spells the annual ritual of organizing the deep freeze in preparation for the season to come. If in doing so, you happen to stumble upon a leftover package of ground venison and are longing to try something a little different, the following recipe will likely be right in your wheelhouse.
Venison cornbread bake is a wonderful dish for those with a hankering for something special, and an appetite that just will not quit. This southern-style dish is sure to become a favorite in your household, and at every wild game dinner for years to come.
Gather Needed Supplies
Prior to beginning, ensure that you have all dishes and utensils at the ready. This recipe requires the use of one pot for cooking your venison mixture, a small mixing bowl, a baking dish, measuring cups, a stirring spoon, and knives. By preparing these items in advance, you minimize the time required to prepare this dish and prevent unnecessary hassle.
* 1 pound ground venison
* 1 small onion, diced
* 1 small green pepper, diced
* ¾ cup picante sauce
* 1-8 oz can of tomato sauce
* 1-15 oz can of whole kernel corn, drained
* 1 cup shredded cheddar or Mexican blend cheese
* 1 box Jiffy cornbread mix
* ⅓ cup milk
* 1 egg
Preheat your oven to 375 degrees. Spray a 2-quart shallow baking dish with Pam or any other similar non-stick product.
Venison Meat Mixture
You will begin by dicing your onion and green pepper. Add the onion and green pepper to a pan with the ground venison. You will now cook this mixture until the venison is thoroughly done, and the onion and green pepper are tender.
When your venison, onion, and pepper mixture is ready, add the tomato sauce, picante sauce, and drained corn. Next, heat this mixture until it is hot and bubbly. You will now add in your shredded cheese, stirring until the cheese is totally melted into the meat mixture.
Pour this venison mixture into the prepared baking dish, ensuring that it is spread out evenly.
You will now prepare the Jiffy cornbread mix according to the instructions on the box. In a small mixing bowl, pour in the cornbread mix and add the milk and egg from your list of pre-readied ingredients. You will now stir this cornbread mixture until completely blended. This cornbread mix is then to be spread evenly across the top of your previously prepared venison mixture.
Place the dish into the preheated oven and allow it to bake for 25 minutes, or until the cornbread is golden brown. Upon removing, allow your venison cornbread bake to stand for 10 minutes before serving.
Simple, Yet Delicious
One of the strongest selling points of venison cornbread bake is that there is nothing difficult about the preparation or cooking process. Simply brown your venison with pepper and onion, mix in additional ingredients, top it all off with cornbread mix, and bake to perfection. Even those on a time crunch can find favor in this dish.
